A traditional bittersweet cider apple from France. Also known as Galop, Douce morelle.

This tree is vigorous and productive. It has a low susceptibility to fireblight and scab, and it will need thinning to maintain annual bearing. Blanc Mollet is used exclusively for cider production; it is not suitable for fresh eating.

The apples are small, slightly conic, ribbed, and irregular in form. The pretty yellow-white skin is freckled with red lenticels and bruises easily. This apple yields a deep gold, bittersweet juice that is called "complete" as it has the sugar, tannin, and aroma needed to make a single variety hard cider. Blanc Mollet has probably been grown in France since the 1700's. It is first mentioned in 1839, and it has long been regarded as an essential variety in Calvados production. Its parentage is unknown.
