Yellow Huffcap Pear on OHxF 87 (Spring 2024)


A traditional midseason perry pear of high quality from England.

The mature tree is large with spreading limbs, and it is moderately scab resistant. It is slow to come into bearing, but very productive once established. Fruit will need to be thinned to maintain annual cropping. Yellow Huffcap is used exclusively for perry; it is not suitable for fresh eating.

This midseason pear is small and elliptical with green-yellow skin that is russet around the stem. The flesh is yellowish and contains some grit. Yellow Huffcap should be harvested slightly underripe as fruit will cling to the trees and rot. It should be milled within a week of harvest. It yields a medium sharp juice that contains a higher concentration of citric acid than most perry pears, and produces an excellent full-flavored vintage with moderate acids and low tannins. The Huffcaps are a related group of pears with a distinct elliptical shape, protruding calyx end, and capacity for producing a strong perry. The Yellow Huffcap may be the original Huffcap pear from which the others were derived. The name Huffcap might refer to a potent brew that could "huf (raise) one's cap," or it might be an alternate spelling of "Huffcup," referring to lifting your cup when making a toast. The first recorded mention of this pear is from 1811.
