Spijon Apple on G.11 (Spring 2026)


A delicious apple for eating, baking, and sauce.

This is an upright, spreading tree that is tip bearing. It is reported to be susceptible to fireblight, CAR, scab, and mildew.

Ripening with Northern Spy, about a month after McIntosh, the skin is crimson flushed over orange and the light yellow flesh is crisp. Spijon is a large, attractive apple with a sweet, sprightly flavor, and it stores very well for up to three months. This is a great all-purpose apple for fresh eating, sauce, and baking. 

This apple is a cross of Red Spy and Monroe that was made in 1944 at the New York Agricurtural Experiment Station. It was released in 1968 along with Jonagold bringing the number of varieties released by the Cornell breeding program to 57 at that date. Spijon was developed with a view to producing a quality processing apple that would begin to crop earlier than its slow-to-pruduce parent Red Spy.
