The apple is smallish and flushed pink over green. Doux Normandie produces a sweet, aromatic juice with subtle tannins. From WSU: Tannin (percent tannic acid): 0.29; Acid (percent malic acid): 0.33; pH: 3.8; SG: 1.047; oBrix 11.8.

Doux Normandie has unknown breeding origins but has long been used in French cider production. It is predominantly grown in the region of Normandie.
