A traditional French cider apple, classed as a bittersweet. Also known as Adrienne, Sauvageon Adrienne.

A productive, vigorous tree, Mettais is moderately susceptible to fireblight, powdery mildew, scab, and canker, and it tends to biennialism. This apple is used exclusively for cider; it is not suitable for fresh eating.

Mettais is an attractive, medium-sized apple that is flushed red over a yellow background and webbed with russet. It yields a beautiful, deep amber juice, that is tendre and amère (soft and bitter), very aromatic, and is traditionally used for cider and calvados. (From WSU: Tannin (percent tannic acid): 0.25; Acid (percent malic acid): 0.19; pH: 4.49; SG: 1.056; oBrix 12.9.)

Mettais was first grown on the property of Monseur Mettais at Eure, Champagne. It was added to the list of recommended cider varieties in 1949.
